(especially chocolates for me !)

Dear Bawers,

I will be away all weekend - an Italian course this time,

so unless the party takes place Sunday late afternoon my time, I cannot attend.

I will be with you in my heart though and will continue studying and practicing,

and mainly disseminating all I have learnt here in ICT courses for teachers.

My big thanks go to our moderators who helped me a great deal.

I cannot send you flowers from our garden, so at least a winter scene from our place.

My dear Beloved BaWers and Moderators !!!

These incredible five weeks have decorated a lot my life routine. I used the digital supplies in my teaching activities but I`ll try to blend my classes from now on. It was a great opportunity and a real challenge for me, indeed !

Here is the Siberian delicacy called “Stroganina”, in English it means “sliced frozen meat or fish. Enjoy !

As a token of my appreciation, here's my gift for the Graduation Party, my classic codfish recipe. Enjoy!  :-))

Oven-baked codfish (Bacalhau assado no forno)

(For 4 people)

 

 

 

2-3 pieces frozen cod (thick)

3-4 garlic cloves

3 dl (1 1/4 cups) extra virgin olive oil (maybe more)

6-8 medium-size potatoes

 

Thaw the cod for a few hours and place it in an ovenproof dish.

Wash the unpeeled potatoes well and cut them in halves or quarters. You can peel and slice them, if you prefer. Then place them around the cod. Next peel and slice the garlic cloves finely and spread over the cod. Finally, pour the olive oil over the cod and potatoes. Be generous!

Place in a 210 oven for 30-40 minutes (until everything is light brown). Halfway through the baking process open the oven and pour hot olive oil olive oil over the cod and potatoes with a spoon.

 

 

 

"Bacalhau assado" deserves a bottle of good red or white wine

I prefer red. And the more... the better!!!

Dear BaWers 

I'd like to share you you my recipe for:

 

Rice Pudding (Arroz Doce)

 

Ingredients: 

One cup of rice, water, 1 thin slice of lemon peel, lemon zest, 1 small pinch of salt, 1 liter of fresh pasteurized milk, 1 can of condensed milk, 1 cinnamon stick, 4 egg yolks, cinnamon powder.

 

Preparation:  

Bring 4 cups of water to a boil (4 times the volume of rice). Add the rice, a pinch of salt, a thin slice of lemon peel,  lemon zest (the rest of the lemon), the cinnamon stick, and stir. Reduce heat, cover and simmer for 20 minutes or until rice is well cooked. Add boiling milk. After 5 minutes of boiling add the condensed milk. The final texture should be creamy.

Remove from heat and add the egg yolks previously diluted in a little milk. Bring to the boil again, stirring constantly. Add more milk if you think it is not creamy enough.

Pour into a bowl or platter and sprinkle or decorate with ground cinnamon while hot.
